Thai Pork Noodle Salad
This is a family dish taught to my mother many years ago. It’s been my favorite since I was young. It became my requested Birthday dish. I’ve yet to meet someone who doesn’t like this dish. It was also my go to dish when school requested a cultural dish. It’s easy peasy and I’m sure you and yours will enjoy.
- 4 packs of Ramen (You won’t need the seasoning Packet)
- 2 rolls of Glass Noodles
- 3 Tbsp of Bacon Grease
- 4 Thinly Sliced Boneless Pork Chops strips
- 1 Lrg Onion Thinly Sliced
- 3 Garlic Cloves Minced
- Fish Sauce to taste
- Salt & Pepper to taste
Directions to make:
First cook your ramen in salted water, remember you don’t need the flavor packets. Cook until noodles are Al Dente. Once cooked drain and shock with cold water to stop cooking process.
Next get a bowl big enough for your glass noodles and fill with some hot water, place your glass noodles in and pay attention. Once the haystacks separate, remove noodles and again drain and shock with cold water. ( I use cooking scissors to cut both noodles) cooking process on the noodles is literally a minute or three. DONT OVER COOK!
In a large Skillet warm up bacon grease, once bacon grease is liquified, add your Thinly Sliced Pork Chop Strips and Garlic, add Sat & Pepper to taste and a little Fish sauce. Cook on low heat until lightly browned. Now slowly add both noodles and more Fish Sauce and salt & Pepper to taste. Constantly stirring and turning noodles in to skillet until all ingredients are combined.
