Pico Stuffed Chicken Breasts

This is a recipe I came up with because I love Mexican inspired dishes. Everyone who’s had the pleasure to have me make this dish, absolutely loves this.

Ingredients for Pico De Gallo:

  • 5 TBSP of Lemon or Lime Juice
  • 3 Diced Cloves of Garlic
  • 1 Handful of Fresh Cilantro chopped
  • 2 PKG of Diced Cherry Tomatoes ( You may substitute any tomatoes)
  • 1 Diced Purple Onion
  • 1 Diced Yellow or Orange Bell Pepper
  • 1 Diced Poblano Pepper
  • 1 – 2 Diced Jalepenos
  • Salt, Pepper, Garlic powder to taste.

Directions for Pico De Gallo

Combine and Mix all ingredients and let sit and Marinate. ( This Pico is meant to be a rainbow of colors and flavors, adjust to your taste, and save left overs for other Recipes )

Ingredients & Direction for Chicken

  • 6-8 Skinless Chicken Breasts
  • 1 box of unsalted Chicken Broth or Bone Broth
  • 2 Double shots of Tequila
  • 1 whole Garlic bulb cleaned and separated
  • 1 large Handful of Cilantro
  • 2-3 Lemons or Limes
  • 2-3 Jalapeños
  • 1 Packet of Goya Sazon
  • 1 handfuls of Whole Mixed Peppercorns

Directions to make meal:

Take each Chicken breast and add some Mexican Cheese or Your choice of cheese. Leave room to stuff your Pico De Gallo and then sprinkle with cheese again. Brush some olive oil on Breasts and place your stuffed chicken in a oven safe pan. Sprinkle Salt & Pepper and bake for 20 mins at 375°
