Zuppa Tuscana Soup
Keep in mind this is a classic! It’s a great winter Comfort Food. Yes of course some of you may have guessed its origin. It’s a Olive Garden Copy Cat Recipe. You can substitute the Spicy Sausage for Sage Sausage or Regular Sausage. You can also substitute the Kale for Collard or Turnip Greens.
- 1 LB of Jimmy Deans Spicy Sausage cooked and crumbled
- 1/2 Pack of Bacon (save the grease)
- 1 16OZ of Chicken Broth or 1 Can of of Chicken Broth and 1 Can of Vegetable Broth)
- 3-4 Large Potatoes Sliced slightly thin
- 4 Cloves of Fresh Garlic Minced
- 1 LG Onion Diced
- 3 Cups of Chopped Kale
- 1/2 cup of Heavy Cream
Directions to make:
In a large soup pot, add your Bacon and cook until crisp. Keep your left over grease and set bacon and grease aside.
In same pot add your Hot Sausage and continue to cook until brown.
Once cooked add your Potatoes, Garlic and Onion and Bacon Grease. Cook these ingredients until slightly tender.
Next add your Chicken or Vegetable Broth (You can use bone broth as well) next bring all ingredients come to slight boil. Then lower temp to low medium
After after all ingredients are cooked add your Kale and let cook for 5-10 minutes.
Once Kale has cooked down, it is ready to serve, so you can add the Heavy Cream and serve with the left over Bacon crumbled on top of soup.
